Sacha Inchi Protein Muffins with Banana & Dark Chocolate Chips NO EGG NO DAIRY NO GLUTEN
Yesterday evening I was eating my evening snacks with disgust, which were those horrible beetroot protein muffins I baked few weeks ago. I dropped some, and there he was, my baby pup Capu, absolutely LOVING IT. Why don’t I make his life happier. Now they are getting them in their food as extra protein and fiber! oh they really enjoy it. Better to give them to someone who appreciate them…. lol
So I am more or less out of muffins so I needed a new batch. Since I am so hyped with Sacha Inchi, and I just got a new shipment from the US with Sacha Inchi powder, so I thought I would use this for my protein muffins! Let’s see… mix it with things like:
- Organic millet flour
- Crushed organic vanilla beans
- Pink himalayan salt
- Baking powder
- Baking soda
- Psyllium Husk
- Lime juice
- Fresh banana
- Dark chocolate with 81% cocoa content
130kcal / fat 2.1g / carbs 17.3g / protein 9.9g!!!!
I’ve started baking things with psyllium husk – it is really my favourite now! It works as a perfect binding ingredient instead of eggs, xanthum gum or tapioca flour. With psyllium husk, the muffins raises very nicely and the texture is very light, I love it! Plus, it is vegan. I am not vegan, but I like keeping it vegan-friendly for some friends.
I have also started using crushed vanilla powder instead of vanilla essence. This one is also organic, and the whole beans are crushed, which includes fiber. It has the most amazing scent of vanilla, but 1 tsp disappeared pretty much quickly…. the mixture didn’t smell of vanilla afterwards at all.
So I baked them with 190 degrees for 5 minutes, then turned it down to 175 degrees, baked for about 30 minutes…. or more? I cannot remember! hahaha They came out so nicely! This is really with NO OIL!!!
Pochi is also interesetd in it!
So I ate one just now – oh yeah. Very nutty flavour, but not so strong like peanuts and other nuts. Very delicate, I love that. Dark chocolate is perfect for this. Slightly dry, but it is acceptable. I guess you could add some oil but for me this is a protein snack which is supposed to have low carb and fat, so I am very, very happy with the outcome! If you don’t have any restriction, feel free to add some oil, butter, whatever you wish, or even spread some nut butter on it when you eat it. I bet it would taste amazing! But as a “basic” muffin, it cannot be more perfect.
You can see that the texture resembles normal muffins with wheat flour. This is non-gluten muffins, people! For that, it looks absolutely amazing!!!
I really want to explore more on this powder – it is so amazing! I have to try some pancake or…. oh yeah, brownies!!!! ohhhhh it must be amazing with nutty taste!?
