Vegan pizza crust with cauliflower, zucchini and millet flour, NO EGG NO DAIRY, NO GLUTEN!
The classic recipe for cauliflower pizza crust uses mozzarella cheese and/or eggs to bind ingredients. I CANNOT EAT NEITHER! so what can I do?
I am intolerant to flaxseeds as well, so I normally use ground chia to replace eggs which act as a binder. Be careful though – ants love this thing. So I forgot about it for a couple of hours and they all came marching in – wasted 2 tablespoon of chia! Yikes.
Many use almond meal but I just don’t like using it, so here, my favourite millet flour. It was so good in my bread so it should make a very crispy crust – I WAS RIGHT!
The whole things starts by preparing some pulp from cauliflower and zucchini. Thank god I have a slow juicer, so I just juice it, and use the pulp, that is all. I even squeeze the liquid out in a piece of cheese cloth, then you get this. This was approx. 1.5kg of cauliflower and zucchinis!
Now the fun part. The first time I tried it was hard to make a thin crust because they all got stuck to the wax paper. This time I have the special silicon sheet which NEVER STICKS. so perfect.
Putting ingredients together to make pizzas – super fun! This is vegan, but of course you can put some meat or fish on it! The big pizza has smoked beef and goat cheese. The small one (for me!) has just veggies.
So I chopped the vegan bell pepper cheese I made early on top of the crust. I just put some tomato puree underneath. Then started putting all kinds of vegetables. Salt, pepper, spray some olive oil. Now it is ready to be baked!
I am really inspired by vegan recipes…. but sorry guys, I am NOT a vegan!
