These are the most beautiful low carb, super low fat protein muffins, which are mainly made of: fresh zucchini, carrots, bananas, ground oat and protein powder! Lots of fiber, vitamins and minerals! Perfect guilt-free snacks to help you with your craving! Very natural taste without any sugar, honey, syrup, sweetener, eggs, gluten nor butter/oil!

This recipe is intended to be as simple as possible, so it would be easy for people to add things, like chocolate chip, cocoa powder, honey, peanut butter, berries… Anyways, I always find such muffins better coz it is much easier for me to calculate the macros!

This recipe is almost vegan, I still use my hydrolized whey protein isolates because I still have lots… but this one does not contain casein nor lactose. You can use plant-based protein powder for sure, but you may have to adjust the amount of water you add to dissolve the powder so that the batter does not get too watery. The next batch, I will make it with vegan protein powder and I will update you with the results!

I have proven that vegan eggs (chia/flax eggs) were not necessary in making muffins. They are great source of fibers but they add too much unnecessary fat. I’d rather eat my almond butter than adding that to my muffins! I just find that chia and flax are overrated, that’s all.
