No nut no soy super delicious VEGAN cheese!

Few days ago I had a craving for a pizza with cauliflower crust, and I really wanted to make this amazing vegan cheese by Anja Cass again. I appreciate this recipe a lot because it just tastes incredible! Most of the vegan recipes use just so much oil and nuts, which do not suit my fitness nutritional plan AT ALL. So this one is very lean, does not use any oil, simply healthy!  However, this time I used a couple of purple sweet potatoes so the colour of the cheese at the end became strange… looks as if I added a bunch of artificial red pigments! Anyways, this cheese is relatively easy to make but you need a good blender. 2 things which you need to do – chargrill bell peppers, and steam sweet potatoes. I didn’t have much time so I just cooked the latter in a microwave. Nuking is not optimal, but sometimes we just don’t have all the time available right?

Ingredients:

  • 1 cup water
  • 1 cup oats
  • 1 cup sweet potato, steamed until soft
  • 1 whole roasted red peppers, marinated in vinegar
  • 0.5 cup nutritional yeast
  • 1 tbsp smoked paprika
  • 2.5 tsp celtic sea salt
  • 0.5 tsp white pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp lemon juice
  • 1 cup water extra for over top of mixture in blender

Agar Agar thickener:

  • 1.3 cups water
  • 2.5 tbsp agar agar powder

Always taste! I like adding more lemon juice to the mixture.

Blend all the ingredients
